Healthy Dinner

The month of March is observed for Endometriosis. There are millions of women suffering with this illness. Don't not suffer in silence. Please see your doctor for methods to help rid yourself of this illness. In the meantime, there are many things that can be done at home to minimize the symptoms and help alleviate the pain. Here's the million dollar question: "What is endometriosis?" Endometriosis is a condition in which cells similar to those in the endometrium, (the layer of tissue that normally covers the inside of the uterus) grow outside of it. Most often this is on the ovaries, fallopian tubes, and tissue around the uterus and ovaries; however, in rare cases it may also occur in other parts of the body. The main symptoms are pelvic pain (especially during mensuration) and infertility. The best thing to do is to maintain a proper diet to eliminate most of the pain. Certain foods to avoid would be, Wheat, Dairy, Red Meat, Trans Fat, Soy, Alcohol, Processed Foods and refined Sugars. For these foods continue to aggravate the symptoms. Try using Olive or Avocado oils for stir fry's of sautés. Grab a hold of as many leafy greens as possible, like, Kale, Chards, Spinach, Collards. Consume almonds and walnuts. Swap your meats for wild caught Salmon, Mackerel or Tuna. Spice it up with turmeric it has anti inflammatory properties. Try as many herbal teas as you can including dandelion root, raspberry leaf and nettle to name a few. This recipe will be a meal for dinner.


Ingredients: 1 portion of Fish (Salmon, Tuna, Mackerel your choice.), 1 onion, 1 bundle of each, Collards, Kale, Bok Choy, 1 Carrot, 1 pepper (red, orange or yellow), Turmeric Powder, Curry Power, Himalayan Pink Salt, Pepper, Garlic, 1 cup of Brown rice, 1 can of coconut milk, 2 teaspoons of Olive or Avocado oil

Directions: Cut all greens and rinse, Cut carrot, Cut pepper and onion and place half of each to the side. Clean fish and season with salt, turmeric, garlic, curry and pepper. Rinse rice, add 4oz of coconut milk and the rest water and place on the stove to boil (cook rice according to directions or your liking). In a sauté pan add 1 teaspoon of oil. Add peppers and onions then greens and carrots. Stir frequently until cooked. Usually takes 20 minutes. Use the other teaspoon of oil and rub on the seasoned fish. Place fish in the oven for 20 minutes or until its to your liking. In a small pan steam the other onions and peppers for 2 minutes and a tablespoon of water. Add 2 teaspoons of curry power, a dash of pepper and turmeric and the rest of the coconut milk. Let simmer. Add over the fish and rice if you like.
